HP Printer, print in B&W only?

Usually when I have something to print where color is of no significance in windows I can tell it to print in gray scale rather than color. I cannot seem to find anything resembling this for my HP C3180 printer. Am I just missing it somewhere?

I'm running Leopard, so the Tiger tutorials I've found do not seem to help.
