Many of us with the Mac Pro 5,1 keep drives with previous OS's on them for running legacy software such as FCS, which normally is a good practice. High Sierra installs a firmware update to the MacPro 5,1 that effectively prevents booting from a drive with a previous OS. There is a thread about it of the FCP X Forum. Guess my machine will stay topped out at Sierra.

Wrong info in that link. The Mac Pro 5,1 can boot any previous OS with the latest firmware.
