I stupidly changed my watch passcode and told myself I would remember it, (of course I did not). Then due to an iPhone issue, I had to get my phone swapped out at the apple store.

Now in the apple watch app on the phone, it doesn't show the phone being paired with my watch, so I can't erase the watch content from the phone.

What in the world can I do here?

EDIT: Figured it out. Force touching "power off".
 
You have to erase the Apple Watch to change your passcode. Do a backup on your phone and it will backup everything from your watch. You can erase the watch from the app or connect your watch to the charger and then hold power button to bring up the power menu the force touch the power off option and it will bring up an option to erase all content and settings.

Once you are able to pair your watch you just need to enter your iCloud credentials when setting up your watch.
