So what gives? I can't connect iPhone 6 with MacBook Air via BT?? I am running Yosemite on my mid-2011 MacBook Air, 8.1 on my iPhone 6 and iPad 3. iPad 3 pairs and coonects fine, iPhone 6 is paired but will NOT connect no matter what I try.

When I try I get a "Network no available" and it disconnects.

That's normal. Apple doesn't want you to do this.

It used to pair/connect but you couldn't do anything with it. Now they just took that away for whatever reason.

Even if you were connected, what would you do?

Apple does not allow internet sharing via Bluetooth, only Wifi or USB.

Apple does not allow file transfer via Bluetooth, only Airdrop or USB/iTunes.

Apple is Big Bad Mommy and you'd better listen to her, or else.

One way to get the devices connected is by using an App called Authy.
All you need do is put the App on both your iPhone and the Mac, connect with Authy then Bluetooth between your Mac and iPhone will show as connected.
