I got an ipod touch and I cant work apps

I got the new touch and I downloaded some apps from the app store and when i click on them to use em they open up for 1 second and close and they keep doing this. I even restarted my ipod touch
 
I have had this problem countless times since I got my iPod...and I have 2.1.1.
Usually a simple restart fixes it but still...
 
How can you have 2.1.1 there is only 2.1.0 2.2 will be out soon with background processing.

P.S. You will have to restore your iPod to fix that issue and or update to 2.1
