I just got a new MacBook pro from work and being a mac user, Imac before and the "Garbage Can" for the last 5 years, changing the resolution is pretty easy, display and scale but with the new laptop that option is not available. For a specific task I need to set it at 1920x1080 at 125% zoom. Am I out of luck?

Yes and no. If your using the MacBook as is, without a monitor then yes. The Macbook Does not come in 16:9 aspect ratio, so 1920x1080p is not possible. As far as a monitor, if your monitor is 1080p, it may be able to scale to 1080p.
