iPod touch I just received my 16GB iPod Touch

Finally! It looks awesome. I just have a few questions before I get started...

1: How do I jailbreak my iPod touch and what do I need to do to get started? I've seen a lot of people here rave about their jailbroken iPod touch.
2: What kind of applications will I be able to install once it has been jailbroken?
3: Will I be able to change the interface such as themes and icons?

1. You can go to www.jailbreakme.com to have it automatically jailbreak it for you with no chance of bricking.

2. You can install apps such as the basic mail weather and stock apps as well as emulators such as the NES.

3. Yes you can change themes I believe.
