I noticed they are gone by on both the pro and air, so, if I wanted to plug in a mic, what am I to do? I know theres the usual mic on their but for singers, or actual mic users, what would I need to do?

You would need an audio interface with an "actual" microphone, or a usb microphone. Singers and "actual mic users" don't use a 1/8th inch input.

Microphone port is available on 15" and 17" MacBook Pro.

The MBP 13" single audio port also works with iPhone headphones:

Combined headphone/line in (supports digital output)
Support for Apple iPhone headset with microphone

Most professionals would use an external sound card anyway.

Or hopefully in the future a thunderbolt microphone adapter.

Bit OTT here. USB 2.0 is fast enough for audio transfer. I use a USB 7.1 adapter. Does a good job. Bought it off eBay for £3 and supports mic and external speakers, both 3.5mm. Can choose input and output through sound in system prefs. Auto selects USB audio when I dock my MBA as it remembers last setup when everything was plugged in

The new headphone jack also includes a mic input in the same jack, just like the iPhone headphone port does.

To plut in a microphone that isn't built into an iPhone-type headset, you would need a splitter of some kind, I think this would work:
