I have two questions, 1. what do i need to open pdfs and put text in them? 2. how can i delete this download form my templates if i can not access it, its not highlighted and just grayed out? Im still new to mac os, so im still learning the ins and outs of it.

You’re a bit vague, what App did you use to download this file, I guess Safari.

If it's greyed out it might not be on the Mac, or it's not downloaded completely, I think you need Adobe Acrobat 9 Pro or a similar program to edit a PDF, but if it's locked it's normally not possible.
If the file was downloaded with Safari, click in the down arrow on the top right, highlight the file and hit delete.
