Not that it would make a difference, I'm just being curious here. But with the 4S, you couldn't play iTunes-purchased 1080p video, only 720p. I imagine Apple has taken the same stance with the 5. I doubt you could tell the difference on such a small screen anyhow, and the file size is smaller with the 720p, but I'm still curious.

It automatically scales it down to the size of your screen. That's how you can watch videos right now in 720p on a retina screen.
