I am shopping for an iMac that I am going to be using for video editing. I have found two 21.5" but one is a 2.5GHz Quad-Core Intel Core i5 with 500GB HD and the other is a 3.2GHz Intel Core i3 with 1TB HD, and I am wondering which would be faster/better for video editing??

Quad core no question. For even more speed, go for a quad core i7. Those have HT giving you 8 virtual cores, really beneficial for video work.
