I want to buy the new 15" i7 macbook pro upgraded to 32GB ram and 512GB SSD however I'm a little stuck with the graphics choice, for somebody who deals with architectural / photo editing software - autocad, archicad, sketchup, revit, adobe suite etc are the radeon 555x or 560x sufficient? I also play runescape / do some light gaming.

Would it be worth getting the i9 (which I know is overkill) just for the improved vega 16 or 20 graphics? I'm not sure how much of a better performance I would actually see from the upgraded choice?

Depends on what you actually do. For gaming, Vega is going to be a healthy boost in any case. For professional software, depends on how efficient it is at utilizing the GPU.

Starts about 1:40 in regarding graphics upgrades.

Photo Editing: Literally no difference.
Gaming & video editing: Worth it to get the Vega 20.
