I have 384 and I am considering going to 640. What type of performance difference would I see? Bring the advice. Is it worth the 200 bucks?

It may be entirely possible that you are not using 'all' of your memory now, so adding more would make no difference whatsoever. The noticeable speed difference comes when disk swapping is reduced or eliminated.
