iBooks Two Up Book Layout

I downloaded a sample of a book from the iTunes store. It comes up in a two up format (two pages displayed at a time) in both landscape and portrait mode. Even in landscape mode the text is hard to read. In portrait mode, I can re-size the pages so one page more or less fits the screen. I then scroll the the right hand page and then flip to the next page. Is there any way to make into a one up display? All my other books are one up in portrait mode.
