I have a lot of people in my Address Book that I don't really want in there... I'm big on organizing, so I like to have things neat.

I can do that, but then it would erase the information I have saved in iChat (i.e. a person's name, rather than their actual screen name).

You can delete just that. It would be nice if iChat let you decide if you want you to add your buddies to your address book... Lets beat down Apple's door!
