I never really used any kind of instant messaging, except for aim back in college. A bunch of my friends and colleagues seem to have all of a sudden migrated to google talk, so they convinced me to actually use iChat. I opened it up, set up my Google Talk account, and everything seems to be working fine.

My question, though, is what Jabber is? I set up the account as a Google Talk, but now my preferences all say jabber. My contacts in Address Book all have Jabber next to chat names rather than google talk. Is this just what mac calls Google Talk, or am I doing something wrong?

Jabber is a protocol that iChat uses to communicate with other clients that use the protocol (e.g., Google Talk):

Yup. Google Talk is just a Jabber server run by Google.

Much as ".Mac"/"MobileMe" chat is just a rebranded conduit to AOL's AIM.
