I'm pretty sure it will do this automatically. There doesn't seem to be any setting that allows you to change this if it doesn't.

If you download Chax, http://www.ksuther.com/chax/
Then go to iChat --> Preferences --> Chax -->Away
Check Enable Auto Away and modify the minutes to your liking.
