If I delete and old iCloud account and log in with a new one will it show all my info and IMessages.

iMessages aren't synced with iCloud. All data from the original account will be removed, I believe, meaning stuff like Reminders, Notes, Calendar entries in your iCloud calendar, iCloud contacts, etc.
