Not versed at all with IPhone...I signed in on iCloud on my mothers Iphone using my ICloud sign in ID....now she has all my contacts and I am getting her call History. She has never used an iCloud ID before......if I delete the ICloud ID, will she lose all her pertinent info...contacts, photos, etc?

If they're your contacts, photos, etc and you disconnect her phone from your account then unless they're on her phone via another method yes...she'll lose them. But you'll still have them.
You need to do a little logical thinking and figure out how to separate you from her and get her all the stuff she needs.
