Icon Change

Is it possible to change the typical safari icon? Like change my mail icon to an envelope or an M.

Nope, that is not possible. At least not in any officially-supported way.

You can change it, just disable SIP before change and you can enable again after.

disable sip, change the icons u want to change, reboot, re-enable sip (this is for system-level icons, including safari, mail)...
