I have an external hard drive connected to my Mac and it displays all of my folders, however, they are now displaying the icon to the left of the folders that will let me expand or collapse the folders. Where is the option to turn this on?

Here's one thing to try, there is an icon in the top toolbar, just to the right of the selections for list/colum/grid view, and all that (screenshot attached). On the menu that pops up with that button, try setting it to "none" and see if it comes back.
