As usual for an apple update, something has broken. My un-jailbroken iPad 1 is now displaying multiple copies of every app and folder, and they cant be deleted. I suppose I could do a restore, but I don't want to lose any of my data. Any ideas on what to do? I have restarted the iPad several times, but it does nothing.

When you restart, are you doing the normal restart (where you hold down the power button, then slide to power off)? Instead, try a hard reboot, where you hold the home and power buttons simultaneously for about 10 seconds until the device reboots by itself.

If that doesn't work, you could also try "Reset Home Screen Layout" or "Reset All Settings" from the Settings > General > Reset menu. This will not erase any data, though you will need to rearrange your icons and/or reconfigure some device settings, depending on which option you choose.
 
I've had the same thing happen to me, pre-update. I think a hard reset (home + power buttons) fixed it for me.
