Just wondering.. I'm selling my 3G to a friend, and I'm curious what I should do with the SIM thats in the 3G currently.

you need to take your sim card out. he's buying the phone, not the number, so he presumably already has ATT and just needs to pop his sim card in there.
 
Here's another question. Once you start the "restore and erase all data," is it possible to stop it? I'm selling in a little while, and don't want to erase until the cash is in my hands in case the buyer flakes, but I don't want it to be reversible, obviously.

Yes, if you hold down power and home it will abort the reset and erase. It puts it in recovery mode so he/she will still have to restore it.
 
So then they'll have access to my data, or no, because they won't be on my computer?

It will be restored to factory settings after they restore, but they could get the data off the phone theoretically since a restore doesn't securely erase it, although that would be quite unlikely.
