iOS 7 (beta) is probably the most buggiest OS I have every used, there are countless small bugs, but I can't complain since its a beta. So anyway, I know you cannot restore from back up if you go back to a previous version, but can it save my app-data? I have an app that my work has created, for getting all conference videos and buisnness projects, I have about 5.5gb of data on that app, and I would rather not download it again (given my apartment speed is 1mbps). Is there a possible way to get the app data and put it back into it when you restore/downgrade?
 
That depends on the app, really. Connect your device to your computer, start up iTunes, and see if the app shows up under the File Sharing box in the Apps tab for your device. If not, you could try a program like iFunBox and see if it can read your app,s daa directory.
 
Once you restore, you'll lose everything. A restore wipes all data from the device and it'll be like you never even set up the phone.
