If I take a jailbroken iPhone to AT&T...

Recently, about a week ago, I installed some third party apps on my iPhone. I believe the program was iJailbreak, anyway if I go into AT&T to sign up for a contract (I'm on GoPhone) will they say anything about my phone being jailbroken? If I wanted to do a restore to the factory settings will my iPhone brick?

restoring won't brick your iphone. they may or may not say something. i'd guess that they will, but how much they will care will probably vary from employee to employee.
