If I unlock my 4S with AT&T and I later get it replaced at an apple store will they replace my phone with another unlocked one?

Factory unlocked status of your current iphone will carry over and over no matter how many time u get it swap at apple.

Yes the IMEI status carries over (Well 99% of the time) so the the replacement will have exactly the same lock.

At least with other carriers around the world, the unlock status carried over to the replacement phone. If you're concerned about it, I recommend letting the Apple Genius know that the phone is carrier unlocked and you want to verify the replacement is unlocked before leaving.
