I rarely do any gaming, but have picked up one here or there. My needs are fairly basic with the most intense thing being *some* video editing.

Will I be ok with the slower processor and lower-end GPU?

I also plan on using it for 3-4 years at least. Should I get the higher end model just so I won't have to be forced to upgrade by then?

You should be fine. Honestly, you'd probably be fine with the base 21.5" if you'd be happy with the screen size.

I'm one of those twisted people who, when it comes time to buy a computer, will buy the most computer I can afford even if a lower end model will meet my current needs. However as far as actually meeting your stated needs, it seems to me that a lower end 27" would meet your needs.
