IF resetting, will it go to 4.0.2?

I haven't downloaded the update in itunes...and can I just disconnect from the internet when I restore my iphone in order to keep 4.0.1 if I need to restore?

No. If you didnt save your SHSH then if you hit restore it WILL go to 4.0.2.

iTunes doesn't force you to update. Just click the don't remind me again box the next time it pops up.

Well your initial question is confusing, at least to me.

Why would you even hit restore if you plan to unplug the phone ?

Both of these are correct

You are never forced to update.
If you choose restore, iTunes will install 4.0.2 firmware on your iPhone
