Can they just unsolder the SSD and replace with a new one, or the only thing they can do is to replace the entire logic board, which can be very expensive.

They use a Thunderbolt 3 tool to recover the data.

Then they replace the entire logic board.

Same for RAM, they replace the entire logic board ($1000+). It's a good motivation to keep your temps low.
 
So if your ssd fails on your 64gb, 8tb ssd setup, out of warranty, I imagine that is a hefty bill to replace, b/c it's all one part.
 
Apple is not going to "unsolder" and then replace a component part.
They'll replace the entire board, and charge you for it.
 
Yep and to my knowledge they won't try to retrieve the data. If you don't have a backup then that's not their problem
This is my understanding as well, at least for Macs with T2. On 2016 and 2017 models they did have a data recovery port, but that was removed when T2 was added on the 2018.
