If wearing Apple Watch n iPhone not close will data be recorded?

It will. Activity tracking and workout recorded on the watch when the watch is not connected to the phone will be synchronized to the phone once it is connected. I often work out without my phone nearby and the data are always synchronized to the phone once the watch is nearby the phone. The only exception is when you are running out of storage space on the watch.
