If you have a tracking number, you should have a serial number

Incorrect. Apple has yet to mark any shipments as shipped people have found there tracking numbers via ups not apple and I'm positive ups won't know my serial number.

Just because you find a tracking number, does not guarantee the serial number on support profile. That will not be be updated until AT LEAST when Apple officially marks it as shipped.
