If you installe OS 3.0, do you loose your previous sms and other stuff?

No, you can restore from your previous back-up. Just make sure you back-up your phone with iTunes right before you upgrade to 3.0.
So if you install OS 3.0 do you loose it? If yes, mmm, I won't install it
You only lose your sms and other data when you set up the phone as a new iphone, which i'd actually recommend doing for stability.
