Im currently on series 1. Which version allows me to connect to custom wifi. I don't care about LTE and paying $120 a year for it but connecting to local wifi would be useful.

Im confused, which version of Apple Watch allows me to connect to local wifi?

Not positive but I think if you have logged onto the WiFi with your phone, it will allow the watch to do the same without the phone.
Correct, the watch can only connect to a "Known" Wi-Fi network. This means that you have to first connect to the Wi-Fi with your paired iPhone and then your Series 1, 2, 3 can connect directly to the Wi-Fi.

There is no way to directly connect to a Wi-Fi network from any of the Apple Watches.
