I'm Lost?? On EyeTV products

Basically can i hook up eye tv (either Hybrid or 250) to my Mac Pro and than Dish Network and simply record all the channels i pay for either directly connected to the box or wirelessly, with of course the right software. or is there restrictions tht only allow me to pick up certain channels?? Please help?
