I currently have the Mid 2011 model with 3.1GHz CPU and 8GB of RAM with standard 1TB HDD and I get 9100 out of Geekbench 64-bit. My question is, if I change the HDD to SSD, how much performance increase I would see in the benchmark points?

I don't know that you would see much of any difference, as I believe Geekbench tests processors and maybe memory throughput. Whether it affects your score is irrelevant. What actually matters is that your computer will run significantly faster with and SSD.
