Hello, Apple provides no upgrades for my late 2012 iMac, but we all know that this machine is capable of a lot and good for more years. I can't even update Office because it requires OS update which is a little sad since security patches are not being applied for Office...

Are there any good guides to upgrade anyway and does this affect the performance or stability of the machine?

Thank you!

There's something called OpenCore Legacy Patcher (OCLP), which I believe for your machine can get you up to the latest version, Ventura.

For instructions on how to install macOS with OCLP, read this, and all the other pages in the sidebar—all of it is important information.

I've done this personally on many machines before, so if you have any questions along the way, I'd be happy to help!
