I need to use an HDMI cable to connect my second monitor to my iMac.

Should I use Apple's official hdmi cable or should I try the monoprice redmere cable?

Would RedMere technology even work using a Thunderbolt to Hdmi adapter?

You could use a mini-DP to HDMI adapter along with an HDMI-HDMI cable, or a Mini-DP to HDMI cable (which would have to be third-party as Apple doesn't make one). Personally I've had spotty luck with Monoprice cables, I'd go for one like this one from Belkin.
 
I was just mainly concerned about RedMere compatibility more than anything.

Plus I already have the hdmi adapter I just need to get an hdmi cable.

Also, I once bought an official belkin MDP to MDP cable from the Apple store and it fell apart.
