I'm going to be buying an iMac probably within the week and I thought it was cut and dry but I'm second guessing myself. Initially, I was going to buy the baseline model, with 1GB of ram, and then buy 2x2GB from NewEgg.

However, I do some moderate gaming, Counter-Strike: Source and World of Warcraft, and I'm wondering whether it might be better to scrap that idea, and spend the money on the higher end iMac 20'' with 2GB of ram and the better graphics card. Then sometime down the line, if I notice speed is a problem, I'll just buy 4GB.

You should get the 2.66 model. Its a much better deal if you are a gamer. Its 300$ more and you are not paying for anything you wont use. And 256MB videoram versus 128 is a bigger difference for gamespeed than 2GB versus 4GB normal ram.
 
Also, price the refurbs at the apple online store. You can save a couple hundred more there.
