At the time I got my iMac (1.25, Superdrive, 17", 80GB, 256MB RAM)it was the top of the line before the 20" came out. I am going overseas to work in Bosnia and it will be my main source of entertainment for the next year. I can run xplane and other such programs but how much of a difference will it make adding memory. Will 512 give me a significant performance boost? Or should is it remotely worthwhile ($$$ wise) going much higher to 1GB?

I want to get a G5 but I would rather wait till I get back to the US before I get it.

Any advice would be great!!!

the difference from 256 to 512 is very large, maybe as large as from 512 to 1 gig. Both are very significant jumps in terms of performance. 512 will be a lot better than what u have now, but 1 gig will really be great.
 
You might want to just go for 512 for now if you're for sure planning on getting a G5 when you get back. But if you've got the cash, 1gb would be wonderful.
