If I wanted to purchase an iMac Mini with a Dual Monitor setup, what would your recommendations on what would look the nicest, and fit into a budget of around $1500-2000?

Guessing you meant Mac Mini.
What size monitors are you wanting?
Wanting higher refresh rates monitors? 100+Hz ?
1080p? 1440p? 4K?

Is the only appeal to this setup for it to have dual monitors or is there a particular working purpose?

Being a Mac Mini (unless you already have other accessories)
You will need to factor in:
Mouse
Keyboard
Speakers
Webcam

If you are wanting full use of all Mac apps such as facetime, etc.

Looking the nicest is also subjective and you'll probably receive a dozen or more suggestions.

If you can state the top 2-3 purposes of the machine it will give folks more information to help point you at different devices.
 
I am using it for primarily work purposes. I have a dual monitor set up at the office, but when I work from home, I need it to use and utilize both monitors. I will be using wireless mouse and keyboard. Speakers are not important to me, neither is a webcam.

I did mean Mac mini. Thank you.
 
With that budget, I'd probably go with two of the LG Ultrafine 4K displays that Apple sells directly.

EDIT: Unless that budget includes the Mini itself, of course.
