Well I'm going to be doing programming and doing video editing a lot.
I'm thinking of either buying a mac desktop and a windows laptop,
or windows desktop and mac laptop. What do you think will be the best option...

PC Desktop, Macbook pro.

I also do a lot of programming, but I use bootcamp on my MBP, and it works great for me. VB 2005 for ASP .NET with 2008 R2 SQL

why would we know what's the best solution for you?

Which OS do you prefer the most? Do you already have money invested in expensive programs for one or the other? Which OS do you want for your work machine, and which do you want for your portable machine? Do you want to be able to use the same programs on both machines? Either get both with the same OS or you are going to have to buy multiple licenses.

Pretty sure you can answer this question on your own. Be a big boy, you don't need people to hold your hands.... it's your computer wouldn't you rather pick the solution that YOU want, not what some other people may want?

If you're not going to be super portable with it get the iMac.
I just exchanged my base "15 MBP for the base iMac and got $800 back (including warranty).

The iMac screen has awesome resolution and will fit your needs at home.
But if you need it to travel/schoolwork/etc. get the MBP.
