I have an iMac, and I'm planning to get an elgato EyeTV (probably 250) and DirecTV service.
My big question is whether I should order HD service or not.
Since the video is going through an RCA or s-video cable to get into the EyeTV box, how much of an improvement (if any) will I notice with HDTV?

None what so ever. The eyetv250 does analog only, all you are going to see
is analog cable.

You will need EyeTV 500 which is compatible with HDTV, however it may only work with local channels and some pay channels. The channels need to be Clear QAM I believe in order for them to work on and be stored on your Mac. Be aware that HDTV content takes up a lot of space.
