So when these new models roll out in
May, June or whenever, what will it do to prices of the new and refurbished older models?

The prices of older refurbished models will probably drop a little. From places other than Apple, some of the leftover 2011 Macs will get discounted.

Apple itself will stop selling new 2011 iMacs when the 2012 iMacs come out.

New models will sell at new model prices, if Apple has any left over stock of the older models those seem to go to the Apple online Refurbished Store. Individual Apple Stores that have left over old stock try to sell through those at normal prices, they generally don't discount them. To get discounts on older stock your best bet is to check with Apple resellers, sometimes you get lucky sometimes not.
