iMac printer presets?

I'm a little confused....I need to make my Ricoh CL4000DN printer print in B & W only. I went into the print dialog box, but in the drop down box I don't see the "print options" to be able to change it so I can create a new preset.

I'm running 10.5.8. Any thoughts?

Not owned a Ricoh, but My Epson and Samsung will print in B&W if changed in the "Graphics" section of pull-down.

The funny thing is I don't even see that in the pulldown? Why?
