So my understanding is that new iMacs with Lion factory installed come without restore disks. Is that correct? If it is, what am I supposed to do if something goes wrong and I need to reinstall default apps that came with it or the OS? Don't you need SL install disks to install Lion?

Since Lion came preinstalled on your mac, the app store should recognize that fact. You may be able to down a copy free and make a disc. Try it and see what happens.

How does Apple expect people to restore the system to factory settings without the restore discs?

And no, SL is not required for Lion. Create a bootable USB drive for lion and you can install on a clean hdd

Internet recovery does not work with iMacs, it is for the new hardware only (Minis and Laptops), or so I have read.
