I am planning on getting an iMac within the next month probably and was curious if it is possible to get one without the mouse/keyboard (as i already own an apple keyboard and trackpad)?

I didnt see any options like that on apple.com

If not..i might just have to sell them later myself.

they all come with wireless keyboards/mice now. The only apple computer that does not come with some kind of keyboard/mouse combo is the mac mini.

you could try selling off those when you get it to recoup some money
 
I had a keyboard fail on me once when I really, really needed to work. Stores were closed. I keep a backup now.
