In iMessage with Mountain Lion, you could edit that look of the bubbles of text. Now, in Mavericks, I cannot see a way to edit the shape/appearance of the text bubbles. Am I just overlooking something or did they remove this nice feature?

I think you might be looking for this: Messages menu > Preferences > "Viewing" tab. It's the third one in.

Ah, I found the setting, I had just forgotten where it was.
