im about to buy an Apple Watch but I'm a little bit conserned about privacy. It's not that I have something to hide but I don't like to have messages on the screen.

Is it possible not to receive "pop up" notification for iMessages only? Or notification without name and full message appearing?
 
You can configure what notifications go to the watch on an app by app basis.
there's a giant list of apps in the settings on the phone, with an off/on toggle for each one.

and some have a bit more customization, like mail, so it only alerts you if the sender is on your VIP list

you can also turn on "notification privacy" which will hold the main body of the message until you tap on it, but the name still shows for messages

No, no difference between iMessages and SMS Txt messages. As indicated above you can set your Notification Privacy setting to limit the information shared by default to not see the details of a notification until you actually tap on the individual alert.

Your Apple Watch won’t light up if it’s not facing you under normal circumstances.

So if you are sitting in a chair with your watch facing out it will vibrate/sound but won’t display the message until you raise your arm to read it.
