Well, I recently shot a video with my iPod touch and I want to make some edits... but I have a couple of questions.

First of all, I don't think the iOS iMovie app is capable of doing this, and I'm not sure if the desktop version is either... but is it possible to crop a video clip? Not make the clip shorter, but actually crop parts of it out, like you would an image. (I have a video clip of something... but there is a bunch of excess stuff on the top and bottom that I want to get rid of..)

Also, if this is possible, what is the best way to get a video clip from my iPod Touch's camera roll to my Mac?

Opening iMovie and taking a look, I found, that you can press C to crop a video or you go to Menu Bar > Window >> Crop, Ken Burns and Rotation.

And iPhoto will import the videos, which you then can import into iMovie via the Event Library.
For more information use the iMovie Help and search for "iPhoto".
