Importing videos / photos with iPhone and OSX

Good day,

I have this simple question: How do I get the videos on my iPhone onto my MAC to empty some space on the iPhone.

Photos: I have that photo stream enabled. I supposed that all photos taken with the iPhone and transferred and saved onto my MAC in Aperture. I can see them... If I delete them from the iPhone - I suppose they stay on the iMac?
